This Easy Cucumber Salsa Is a Refreshing & Versatile Condiment

Call it salsa, relish, or a minced cucumber salad—I just think it's so refreshing. This is a great gazpacho topper, taco trimming, fish accompaniment...I could go on. You'll discover the versatility of this recipe once you taste it.

What you need to know before you cook.

  • Don't remove the seeds: that liquid is like precious caviar. It macerates with the other ingredients and intensifies the flavor of the salsa.
  • Make this a day ahead of time. The flavor gets better after 24 hours.

Ingredients

  • 1 large cucumber, peeled and diced

  • 1 small sweet onion, finely diced

  • ⅓ cup roughly chopped fresh mint

  • ⅓ cup roughly chopped fresh Italian parsley

  • 2-3 tablespoons white vinegar

  • Sea salt and freshly ground black pepper to taste

Directions

Mix together all the ingredients in a small bowl. Cover with plastic wrap and chill until ready to serve.

  • Add one sweet red or orange chile for more color
  • Substitute the green onion for the sweet onion
  • Try apple cider vinegar for deeper flavor
